Catch 'em & Cook 'em: Overnight Coffee Cake

Ingredients:

3/4 C sugar

1/4 C shortening

1 tsp vanilla

1 1/2 C flour

1 1/2 tsp baking powder

1/2 tsp salt

1 egg

1/2 C milk

How to:

1. Cream together the sugar, shortening and vanilla

2. Add the egg and mix well

3. Sift together the flour, baking powder and salt

4. Alternate the sifted mixture with the milk, mixing well

5. Put half the mixture in a greased 9 x 9-inch pan

6. Cover with half the topping (below) and add the remaining batter and the rest of the topping.

7. Bake at 375 degrees for 30 minutes.

Topping:

1/2 C brown sugar

2 Tbsp flour

2 tsp cinnamon

2 Tbsp melted butter

1/2 C chopped pecans
